Homemade Granola

Ingredients for Homemade Granola:

  • 4 cups rolled oats
  • 1 cup shredded coconut
  • 6-8 semi dried figs, chopped
  • 1/4 cup pepitas
  • 1/2 cup almonds, chopped
  • 2 teaspoons vanilla essence
  • 1 teaspoon cinnamon, ground
  • 1/2 cup dates, chopped
  • 1/4 cup raisins
  • 1/4 cup goji berries
  • 1 teaspoon ginger, ground
  • 1/2 cup coconut oil, melted
  • 2 tablespoons cacao powder
  • 1/2 cup dried apricots, chopped

Directions for Homemade Granola:

step one: pre-heat oven to 140-150c & line two baking trays with baking paper
step two: add rolled oats, coconut, chopped figs, pepitas and almonds to a large bowl. stir to combine.
step three: add vanilla essence, ground cinnamon and ground ginger. stir to combine.
step four: add melted oil. stir to combine.
step five: add cacao powder. stir to combine.
step six: spread a thin layer of mixture evenly over two baking trays.
step seven: cook for 45mins, stirring halfway through.
step eight: turn off oven and leave in oven to fully cool.
step nine: add goji berries, raisins and dried fruit.
step ten: store in an airtight container.
