Ingredients for Homemade Baked Beans:
- 1 whole brown onion, finely diced
- 2 cloves garlic, finely diced
- 2 rashers bacon, finely diced
- 2 tablespoons olive oil
- 400g canned diced tomatoes
- 400g canned cannellini beans, drained
- 100g tomato paste
- 2 tablespoons of maple syrup
- 1 teaspoon smoked sweet paprika
- 2 tablespoons of apple cider vinegar
- 1 teaspoon of Dijon mustard
- pinch salt & pepper to taste
- OPTIONAL - Chilli powder. Amount as per your taste and tolerance level.
Directions for Homemade Baked Beans:
step one: heat oil in medium sauce pan
step two: add onion, garlic and bacon
step three: cook, stirring gently, until onion and bacon is browned.
step four: heat oil in medium sauce pan
step five: add all other ingredients.
step six: bring to a gentle simmer for 20-25 minutes
step eight: serve immediately. can be served on its own, or with toast, wilted baby spinach and a poached or fried egg.
