Ingredients for Pumpkin Soup:
- 1 whole brown onion, finely sliced
- 20g butter
- 500g butternut pumpkin, cut into chunks
- 1 whole carrot, cut into chunks
- 500g water
- 1 tablespoon vegetable stock paste
- 100g cream (optional)
VARIATIONS:
- 1 teaspoon ground cumin, added with stock paste
- 100g coconut cream, replace regular cream
- 1 teaspoon ginger, finely diced, sautéed with onion
Directions for Pumpkin Soup:
step one: saute onion and melted butter in large saucepan until lightly browned
step two: add pumpkin, carrot, water and stock, bring to the boil
step three: reduce to a simmer for 20-30 minutes
step four: process soup in a high speed blender until smooth
step five: add cream (optional), process until smooth.
step six: add salt and pepper to taste.
OPTIONAL:
Serve with toasted croutons and toasted pepitas.
