Ingredients for Cauliflower Soup:
- 1 whole cauliflower, roughly chopped
- 2 whole leeks, roughly chopped
- 3 cloves garlic, crushed
- 1.5 litres vegetable stock
- 1 tablespoon soy sauce
- 1/2—1 teaspoon ground black pepper
- milk until required consistency
Directions for Cauliflower Soup:
step one: place all ingredients, except milk, into a large saucepan
step two: ensure vegetable stock just covers vegetables
step three: bring to the boil with the lid on
step four: reduce to simmer without lid for approximately 30 minutes, or until vegetables are soft
step five: process soup with a stick mixer or high speed blender for 1-2 minutes
step six: add milk until desired consistency is reached.
OPTIONAL:
Serve with cooked or roasted seasoned cauliflower flowerets.
