Ingredients for Potato Walnut & Goats Cheese Salad:
- 1 small sweet potato, peeled and sliced
- 500g baby potatoes, cut in half
- 2 tbsp olive oil
- 1/2 cup raw walnuts (or macadamias)
- 1 tablespoon maple syrup (or honey)
- 150g goats cheese
- 4 rashers bacon, cut into 1cm strips (optional)
- 1/4 cup sour cream
- 1 tablespoon mayonnaise
- 2 tablespoons fresh chives, chopped
- 2 teaspoons dijon mustard
- 1 whole red capsicum, thinly sliced
- 1 small lettuce, washed & dried
- 4 stalks spring onions, finely sliced
Directions for Potato Walnut & Goats Cheese Salad:
step one: preheat oven to 200c. arrange potato and sweet potato into roasting pan in a single layer. drizzle with olive oil and season with salt and pepper. roast for 25-30 minutes, turning occasionally, until golden brown. set aside to cool.
step two: line a baking tray with baking paper. combine walnuts and maple syrup in a small bowl. arrange in a single layer on lined tray. bake for 5 minutes, or until toasted and caramelised.
step three: *optional fry the bacon over medium heat for 5 mins or until crisp. transfer to a plate lined with paper towel.
step four: combine sour cream, mayonnaise, mustard and chives in jug. stir with fork and season to taste. thin out with a little milk or maple syrup if required.
step five: combine lettuce, potato, sweet potato, capsicum and walnuts in a large bowl. toss to combine. transfer to large serving platter.
step six: crumble with goats cheese, *optional bacon, and spring onions. serve immediately.
