Ingredients for Beef or Veg Burrito Wraps:
BEEF:
- 2 tablespoons olive oil
- 400g 1 brown onion finely diced
- 2-3 cloves garlic, finely diced
- 400g beef mince
- 1-2 tablespoons spice mix
- assorted variety fillings: eg sliced lettuce, diced tomato or cucumber, grated carrot, grated cheese, sliced avocado, salsa, caramelised onions, cooked black rice, variety of sauces
VEGITARIAN:
- 400g canned kidney beans, drained
- 400g canned tomatoes, diced
- 100g tomato paste
SPICE MIX:
- 2 tablespoon ground cumin
- 2 tablespoon ground cumin
- 2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 2 teaspoon dried oregano
Directions for Beef or Veg Burrito Wraps:
step one: thoroughly mix all spice mixture ingredients together, store in airtight container.
step two: heat oil in large saucepan or wok
step three: add onion and garlic, stirring regularly until browned.
step four: add mince and spice mix, folding over with a spatula until mince is cooked through.
step five: heat tortillas for 1 minute in the microwave
step six: assemble mince and a variety of fillings onto half of the burrito, then wrap tightly
VEGITARIAN:
step four add kidney beans, canned tomatoes and tomato paste in lieu of mince.
