Ingredients for Lemon Chicken Coconut Soup:
- 5 cm ginger piece
- 2-3 garlic cloves
- 5 sprigs fresh coriander
- 2 stalks spring onions
- 1 whole red chili
- 1 teaspoon ground turmeric
- 1 litre chicken stock
- 400g coconut cream
- 30g lemon juice, freshly squeezed
- 2 teaspoons coconut sugar
- 2 tablespoons fish sauce
- 300g chicken thighs, diced
Directions for Lemon Chicken Coconut Soup:
step one: place ginger, garlic, coriander, spring onions and chilli into a high speed food processor and chop finely
step two: place chopped herbs etc into a large saucepan, add turmeric and chicken stock
step three: bring to the boil, then reduce to a simmer for ten minutes
step four: add coconut milk, lemon juice, coconut sugar, fish sauce and sea salt
step five: simmer for a further ten minutes
step six: add chicken, simmer a further ten minutes
OPTIONAL:
Serve with small bowl of cooked white rice.
