This is a great chicken salad for lunches that can be part prepped beforehand.
This kind of meal is great in the middle of the day as it will fill you up so you avoid that snacking/grazing in the afternoon.
If you have some leftover cooked chicken in the fridge this can be a quick and easy high protein lunch.
INGREDIENTS for Mediteranean Chicken Salad:
2 medium sized chicken breasts.
Italian herb mix.
1/4 cup feta cheese.
1/4 cup cherry tomatoes (chopped if preferred).
1/2 tablespoon of parsley or mint.
1/4 cup red onion chopped.
1 cup of cucumber chopped.
2 cups of chopped lettuce of choice.
DRESSING:
2 tablespoons of fresh lemon juice.
2 tablespoons of olive oil.
1/4 teaspoon of Italian herbs.
1 teaspoon of minced garlic.
1 tablespoon of apple cider vinegar.
EQUIPMENT NEEDED for Mediteranean Chicken Salad:
Frypan, serving bowl, mixing bowl.
DIRECTIONS for Mediteranean Chicken Salad:
Cut chicken breasts in half length ways.
Heat oil in frypan.
Cook chicken and sprinkle with Italian herb mix.
Let rest to cool.
DRESSING:
Place all ingredients into mixing bowl.
Mix all ingredients together.
SALAD:
Place chicken and salad items into serving bowl and mix.
Add dressing evenly over the top and lightly mix through.
