Ingredients for Teriyaki Salmon & Julienned Vegetables:
- 1/2 cup tamari (or soy sauce)
- 3 tablespoons mirin
- 1 tablespoon sesame oil
- 1/4 cup brown sugar
- 2 teaspoons ginger, minced
- 2 teaspoons garlic, minced
- 3 teaspoons cornflour, mixed with 1/4 cup of water
- 4 whole salmon fillets
- 1 whole lemon, sliced
- 1 teaspoon sea salt flakes
- 1 tablespoon sesame seeds
- 2 teaspoons ginger, minced
- 4 cups cooked rice
variety of julienned vegetables: eg capsicum, snow peas, carrot. or wilted greens such as bok choy or baby spinach
Directions for Teriyaki Salmon & Julienned Vegetables:
step one: place all sauce ingredients into a small saucepan, bring to a simmer, stir occasionally for about 8-10 minutes, or until sauce begins to thicken. put aside.
step two: preheat oven to 185c.
step three: baste salmon fillets in approximately one tablespoon of teriyaki sauce. and place onto silver foil.
step four: place sliced lemon and a sprinkle of sea salt on each salmon fillet before enclosing in silver foil.
step five: place wrapped salmon fillets onto oven tray and cook for 15-20 minutes.
step six: assemble by placing cooked rice in serving bowl, add julienned vegetables and top with salmon. sprinkle with sesame seeds.
serve immediately
